Kim bop is Korean sushi, and it is the perfect food.
You can make it many different ways. Last night we had kim bop made with sticky rice, egg, asparagus, spinach, sesame seeds, pickled yellow radish (daikon), and carrot wrapped in nori. Here's a video on youtube showing how kimbop is made.
Reading my second book by Michael Pollan (first, The Omnivore's Dilemma, and now In Defense of Food), I'm struck again by how unbalanced and overly processed the American diet is. Maybe I should move to Korea after all...
