This week we've tried three new vegetarian entrees, each of them satisfying and hearty and delicious.
Using special Minnesota black rice, we made Wild Rice and Mushroom soup. I think next time I would cook the rice a little bit longer, and maybe use even more mushrooms. I used baby bellas along with a few shittake and oyster mushrooms, and I think next time I will keep it simpler, with all bellas or button mushrooms. (Click the images to view the recipe.)
This Tortilla and Black Bean Pie was very nice. With chips and guacamole, it's an awesome dinner. I did add spices: I upped the cumin to 1 tsp and added 1/4 tsp each of chili powder and cayenne. In all, I think I added 3/4 tsp salt ( one of my pet peeves is recipes that say "salt and pepper to taste"). I also used cooked dried beans rather than canned, and a sharp white cheddar for the cheese.
My favorite - and this could just be because of how hungry I was when I ate it - was Crispy Pan Fried Beans with Wilted Greens. We used cumin and cayenne rather than the spices listed in the recipe, though I'm not sure about the amounts, because Jack cooked this dish. It was so yummy.

We made the crispy white beans too, but with kale. YUM.

I was actually going to recommend the tortilla pie to you! I love it (I use another Martha Stewart version that uses red pepper flakes). I add tomato paste and a little beef broth (which I guess makes it not vegetarian) but it gives it a little more juice on Costco's whole wheat tortillas. We love it and make it on a regular basis.

This is the one I use, only I substitute black beans for the beef and add a little broth and let it simmer down for a few minutes.

I made the mushroom soup last night,except I made it with bulgur instead of rice (because that's what I had on hand). It was so good! And the bulgur made it so creamy there was no need for milk or cream.
