Spicy Peanut Chicken
(The Cooking Club Cookbook)
yield:4-6 servings
6 scallions, diced (white parts plus two inches green)
1 tsp fresh ginger, minced
3 Tbsp soy sauce
5 heaping Tbsp peanut butter
1 cup water
1/2 tsp crushed red pepper flakes
1 tsp brown sugar
1 Tbsp sesame oil
1 1/2 lbs thinly sliced boneless, skinless chicken breast
Whisk together scallions, ginger, soy sauce, PB, water, red pepper flakes, and brown sugar.
Heat sesame oil over medium high heat and saute chicken until golden, about 4 min per side. Remove from pan.
Add sauce to pan and cook until it begins to simmer. Turn heat down slightly and simmer for 5 min, or until sauce begins to thicken.
Return chicken to pan and cook for about 2 min.
Serve over rice or noodles.
