There may be a 12 in 12 for some of us, but I'll get back to that.
The 2011 resolution Katie has proposed is to have meatless Mondays, and Mom and I have signed on. This semester (at least), Jack and I are trying to eat vegetarian dinners twice a week, and to eat red meat only on the weekends.
We kicked off meatless Mondays with a rich Mushroom Alfredo Fettuccine and caesar salad, using our secondhand pasta maker for the first time. The pasta was delicious.

Mushooms
8 oz baby bella mushrooms, washed and sliced
1/4 cup diced onion
1 clove garlic, minced
Saute together in a little butter until soft and browned. Set aside.
Faux Alfredo
Melt 1/4 cup butter over medium heat. Whisk in 4 oz cream cheese and 1 tsp garlic powder until smooth. Slowly add1 cup milk, whisking to remove clumps. Stir in 3 oz grated parmesan, 1 tsp salt, and freshly ground pepper. (This still needed something...nutmeg? I don't know.)
Add mushroom mixture to sauce and spoon over pasta.

That looks delicious! I want a pasta maker now. We are doing meatless Mondays too!
I'd take this over meat any day! Maybe I should have carb-less Mondays . . .
