meatless monday: chard and white bean soup

A fairly simple, hearty meal. We ate it as Deb suggested, with toast and a poached egg.


It seemed like the right thing to do as the ice and snow headed our way. Here's hoping we still have power when we wake up tomorrow!

I made Deb's soup too and loved it! I didn't do the poached egg, but now I see that was a mistake and I'm making a mental note to do it all again soon. I wish we lived near you still so we could drop by for dinner at your house!

Amy, posting your meatless Monday dishes are almost making me a believer. Almost.

I like how Ft. Smith made it onto the list of big cities in the path of the storm. Arkansas always surprises, doesn't it?
