coriander crusted cod

I've made this three times over the last couple of months, so it officially ranks as one of my favorite recipes of the year. It's just the recipe on the back of the bag of frozen Alaska Cod from Costco, but it takes about 20 minutes and tastes fantastic.

With mortar and pestle, crush 1 Tbs coriander seeds and 1 Tbs cumin seeds. Add 1 tsp salt and 2 tsp pepper, and mix. Coat 4 cod fillets with this spice mixture.

Heat 2 Tbs oil in a pan over medium high heat. Add fillets and cook for two minutes, then turn and cook for 2-3 more minutes. Remove from heat and keep warm.

Wipe pan clean. Melt 1/4 cup butter and 2 Tbs dijon mustard in the pan, stirring until creamy. Pour over fish and serve.


The original recipe suggests serving the fish over smashed new potatoes, which I imagine would be good, but we've had it with brown rice, or couscous, or - last night - day old rosemary bread drizzled with olive oil and sprinkled with flaky sea salt, and toasted.

Eating Pacific Cod in moderation is environmentally friendly and low in mercury or PCBs. Enjoy.

I tagged this so I remember to try making it sometime. I like easy, delicious fish recipes.

Do you have any other book recommendations? I am fresh out and I need something good to read! I like the things you read, although I am not ready for parenting books just yet.
